We just had sandwiches for dinner tonight. So, I'm sending a seasoning recipe that I use. I use this when I cook fish and fish sandwiches.
Seafood Cajun Seasoning
* 1 teaspoon cayenne pepper
* 1 tablespoon kosher salt
* 2 teaspoons paprika
* 1 teaspoon freshly ground black pepper
* 2 teaspoons granulated garlic
* 1 teaspoon onion powder
* 1 teaspoon gumbo file
* 1 teaspoon crab boil seasoning, optional (recommended: Old Bay) if using cut salt to 1/2 tablespoon
In a medium bowl, combine cayenne pepper, kosher salt, paprika, black pepper, garlic, onion powder, gumbo file and crab boil seasoning.

Quick Jambalaya
Quick Jambalaya
* 7 1/2 c. water
* 2 - 12 oz. boxes Zatarain's Jambalaya Mix
* 12 oz. Andouille sausage (or smoked sausage), cut into pieces of your choosing
* 1 c. Guidry's Creole Seasoning (yellow onions, bell pepper, celery, green onions, parsley, and
garlic)
1. In a large pot, bring the water to a boil.
2. Add the Jambalaya mix, sausage and creole seasoning to pot. Bring to a boil.
3. Lower heat and simmer, covered, for about 25 minutes.
Beef Stir-Fry and Rice
Beef Stir-Fry and Rice
* 2 lbs. boneless beef eye of round steak; cut into strips
* 1/2 lb. of Guidry's Creole Seasoning (yellow onions, bell pepper, celery, green onions,
parsley and garlic)
* 24 oz. (2 - 12 oz. bags) Birdseye Asian Medley Steamfresh Vegetables
* 4 tbsp. cornstartch
* 4 tbsp. soy sauce
* 3 bags Success 10-minute Boil in bags rice
1. Heat large skillet over medium-high heat. Brown steak until almost done. Add Creole seasoning and vegetables. Cook until meat is done and vegetables are tender.
2. Mix cornstarch and soy sauce. Pour over stir-fry.
3. Cook rice according to package. Drain. Add to stir-fry.
Chicken Caccitore with Noodles and Green Beans
We had Chicken Caccitore, Noodles and Green Beans.
The Chicken caccitore recipe is based on this one from Campbell's Kitchen.
Chicken Caccitore
* 1 tbsp. oil
* 3 lbs. boneless chicken breasts, cubed
* 2 tbsp. oregano
* 3 lb. jar Spaghetti Sauce
1. In large saucepan, heat oil over medium high heat. Brown chicken with oregano.
2. After chicken is browned, add sauce and bring to a boil. Turn to low and simmer, covered, for 15 minutes.
Noodles
* 1 lb. egg noodles
* 26 oz. chicken broth
* Extra water for noodles
1. Pour chicken broth and water in pot. Bring to a boil.
2. Add noodles and cook to desired texture.
3. Drain.
Serve chicken mixture over noodles. We had green beans on the side.

Cajun Porkchops, Cajun Sauteed Vegetables and Red Beans and Rice

We had cajun porkchops, Cajun sauteed vegetables and Red Beans and Rice.
Cajun Porkchops
* Thin, boneless pork chops (as many as you need)
* Cajun seasoning
* Tbsp olive oil
1. Heat oil in skillet over medium high heat.
2. Season chops on both sides with cajun seasoning.
3. Brown chops on both sides in skillet until done.
Cajun Vegetables
* vegetable medley to your liking
* Cajun Seasoning
* Tbsp olive oil
1. Heat oil in skillet over medium high heat.
2. Begin sauteeing vegetables in oil adding cajun seasoning to taste.
3. Sautee veggies until they are to your liking.
For the Red Beans and Rice, I just used the Zatarain's box mix and fixed it according to the directions. For my main dish of Red Beans and Rice, I make it from scratch. This was just a quick side dish.
